This is a mid-protein (10%), T120 high extraction (nearly whole wheat) flour with a lot of flavor and a bit reddish in color. It is pretty versatile. Try tortillas, pan breads, muffins, cookies, waffles, etc. Family grown and freshly milled in the Bellevue Triangle. Our wheat is free of glyphosate and other chemicals. Flour is unaltered with 0 additives.
